Pickled ginger 

 Directions 

 

1. Peel, then chop fresh ginger into fine strips.

2. Place into a mixture of 1 T sugar, 1/4 tsp salt, and

4 T rice vinegar or slightly diluted cider vinegar. 3. Let stand for at least an hour before serving.

To serve
Place two or three strips as a garnish for each serving of the rice dish. Place remaining strips in a small bowl on the table for those who wish to add more – not everyone will appreciate the strong flavor.
